spinach soup

. 2 tbsp fresh chopped leek
. 2 tbsp chopped spring onion
. 2 small sticks celery
. 2 garlic cloves (chopped)
. 1 small potato (peeled and cut into dice)
. 2 tbsp olive oil
. 4 cups vegetables or chicken stock
. 4 cup fresh spinach
.Black pepper
. 3 tbsp fresh cream

.In a saucepan, heat oil and add leek, spring onion, garlic, celery and potato dices. Cook for some minutes by keep stirring. Add salt and black pepper. Mix well
. Add stock and let boil on high, then reduce the heat, cover and simmer for 10 minutes
. Add spinach and cook till wilt
.Off heat, with help of a hand blender, Blend the mixture till it become smooth
. Bring back on heat, add 2 tbsp fresh cream, and stir for 2 minutes
.serve hot with the rest of fresh cream, Decorate with mint leaves
