. 2 onions (thinly sliced)
.1Eggplant (cut into pieces)
.4 cloves garlic (finely chopped)
. 1 yellow pepper (cut into pieces)
. 2 tomatoes (cut into pieces)
. 1 zucchini (peeled and cut into pieces)
. 2 tbsp olive oil
. Salt
.Black pepper
.Fried Egg for garnish

.Heat oil in a pressure cooker, add garlic and onions. Stir fry till onions are transparent
.Add remaining ingredients,except egg Stir
.Close cooker, bring to full pressure on high heat. Reduce heat and cook for 4 minutes
. Remove cooker from heat
.Open cooker, remove vegetables with slotted spoon and place on serving dish. Keep hot
.Return cooker to high and boil till liquid is reduced to half, stirring occasionally. Pour over vegetables. Serve hot. Garnish with fried egg
