. 150 grams quinoa
. 3 potatoes (peeled and cut into dices)
. 1 tomato (peeled and cut into dices)
. ½ cup carrot (grated)
.1onion (chopped)
. 1 tbsp grated garlic
. 2 tbsp fresh coriander (chopped)
. 1 tbsp fresh leek (chopped)
. Salt
. Black pepper
. Water (3 x the volume of quinoa)


. Wash quinoa grains and keep aside
. Put butter in a pressure cooker; add chopped onion, grated garlic and tomato dices. Cook on low heat
. Add water in the pressure cooker, and let it boilquinoa
. Add quinoa, leek, potato dices, grated carrot, salt, black pepper and 1 tbsp fresh coriander, mix well. Close the pressure cooker and let cook for 10 minutes
. Remove from heat, pour in bowl by spreading fresh coriander on it and serve hot
