Papaya gratin


. 1 Raw papaya
. 2 cloves garlic (chopped)
. 1 onion (chopped)
.30cl milk
.100g butter
.30g flour
.fresh thyme
.1 bay leaves
.grated cheddar cheese (optional)

.peel and cut raw papaya into cubes
.pour water in a saucepan with salt and bring to boil
.Add cut papaya into boiled water, cook till soft. Remove from boiled water and add immediately into ice water
.bring milk to boil
. In a saucepan, add butter, garlic and onion. Stir and add flour. Cook on low heat
.Remove from heat, add boiled milk to flour paste, mix well. Bring on heat again; add fresh thyme and bay leaves. Cook till it become a thick sauce
.Add cooked papaya in a grease gratin dish, pour thick sauce over and spread grated cheddar cheese
.Cook in oven at 170° for 10 minutes
.Serve hot
