.1 kg mussels
. 200G squid
. 300G shrimps
. 350G Spanish rice or short grain rice (paella rice) (soak for 30 minute in water)
. 10 lobster tails
. 1 onion (sliced)
. 3 tomatoes (peeled and chopped)
. 1 red pepper (sliced)
. 1 bowl frozen peas
. 3 garlic cloves (chopped)
.2 pinches saffron threads (soaked in ½ cup hot water)
.3 tbsp olive oil
. 2 tbsp fresh parsley (chopped)
. Salt
. Black pepper
. 3 cups water


. Add water in a saucepan, and bring to boil. Add lobster tails to boiling water, and leave to boil till lobster turn red. Remove from heat, take out the lobster, and put aside for cooling, (preserve the water)
. Remove shell of the lobster tail, and cut the flesh into large pieces and keep aside
.heat olive oil in a paella pan, add onion, stir and let cook till onion turn transparent
. Add garlic, red pepper to the onion and let cook for 3 minutes and add chopped tomatoes. Let cook for 2 more minutes
. Add soaked rice to the vegetables, mix well and add lobster water to it, and the frozen peas, cook for 5 minutes
. Add mussels, shrimps and squid, cook for 5 minutes and last add lobster flesh, salt, black pepper. Saffron threads + the water and cook on low heat by stirring time to time so that to prevent the rice to stuck in the pan
. Add some more water, and cover the pan. Leave to cook on low heat.
. Remove from heat when the rice is soft.
. Spread chopped fresh parsley and serve hot 😉
