Mutton briani


Ingredients for Mutton Briani
.600 g mutton leg (cut into pieces)
. 1 cup vegetable oil
. 3 medium potatoes (peeled and cut into halves
. 450 g onion (thinly sliced)
.1 teaspoon salt
. 6 tbsp ghee

For marinade
.20 g ginger
.13 flakes garlic
.5 green chilies
. 1 medium tomato (chopped)
.2 tbsp lemon juice
.2 ½ teaspoon salt
. 2 ½ teaspoon red chili powder
. 1 ½ tablespoon fresh coriander leaves (chopped)
. 2 tbsp fresh mint leaves
. 1 ¾ teaspoon garam massala powder
. 2 ½ teaspoon cumin powder
.1 cup curd (beaten)
. 1 pinch saffron (dissolved in 1 tablespoon hot water)

For Rice
.5 cups + 5 tablespoons water
.2 ½ teaspoon salt
. 2 cups basmati rice
. 10 cloves cardamom
. 2 sticks cinnamon


For marinade
. In a blender, make a paste with ginger, garlic and green chilies
. In a bowl, rub mutton with blended paste and add all marinate ingredients. Mix well and keep aside for 4 hours or overnight in the refrigerator
.Heat oil in a deep frying pan, fry potatoes slightly. Remove potatoes, add and mix to the marinated mutton
.divide onion into 2 batches. Fry each batches with a pinch of salt till onions are golden brown and crisp. Transfer onion in a strainer. When slightly cool, crumble fried onions and mix ¾ of the onion quantity with the marinated mutton, keep the rest onion

For rice
. Cook rice to semi cook with the ingredients mentioned.
. Drain rice

. Put marinated mutton in a heavy deep pan, put rice over mutton
. Spread the rest onion over the rice and some fresh chopped coriander and mint leaves
. Spread ghee over and cover the pan
. Cook on medium heat for 20 minutes and after 20 minutes reduce heat to low and cook for more 10 minutes or till you see steam comes out
. serve hot with salads
