sauce mango

. 1 ½ kg raw mangoes (peeled and cut into cubes)
. ¼ cup vegetable oil
. 1 teaspoon mustard seeds
. ½ teaspoon turmeric powder
. ½ teaspoon salt
. 1 cup water
. 5 cups sugar

. Heat oil in a saucepan, add mustard seeds. When crackling, add turmeric powder, mango cubes and salt. Mix well. Add water and stir
. Cover the sauce pan, and cook till the mango soften, add some more water if needed.
. With help of a hand blender, blend the mixture till it become smooth
. Reduce heat, add sugar to the mixture, stir till sugar dissolves, and the paste thicken
. Serve at room temperature or cool
