Couscous

Ingredients
.1 ½ cup Couscous
.400 g fresh spinach (chopped)
. 250 g Chickpeas (1 can)
. 1 ½ tbsp curry powder
. 1 onion (chopped)
. 1 bowl fresh tomatoes (cut into dices)
. 3 garlic cloves (chopped)
. 3 tbsp olive oil
.3 cups vegetables stock
. Salt
. Black pepper
. 1 tbsp butter

Method
.Heat oil in a pan, Add onion, stir and cook for 2 minutes. Add tomatoes and garlic and cook for 5 minutes. Add spinach and cook on medium heat for 5- 10 minutes
. Add curry powder, salt, black pepper, chickpeas and ½ vegetable stock, cook for 5 minutes. Add the rest of vegetable stock and let the mixture boil
.Remove from heat, Add couscous, cover and bring back on heat for 5 minutes. Stir with a fork. Add butter, mix well and Serve hot
