Christmas cakeIngredients
.750g mix dried fruits
.250g candied cherries
.160g brown sugar
.130g butter
.2 eggs
.125g flour of all purpose
.125 flour raising flour
.1 teaspoon cardamom powder
. ½ teaspoon cinnamon powder
.15 cl Wine (optional)
.10 cl orange juice


Method
.preheat oven at 160°C
.Cover the bottom of a rounded cake mold with a sheet of newspaper, and then place baking paper over the newspaper and all over the edge of the mold
.Add in a pan, dried fruits, candied cherries, brown sugar, butter, orange juice, wine, cardamom powder, and cinnamon powder, mix all well. Let cook till the mixture begin to boil
.Remove from heat, and let to cool for about 5 minutes
.when the mixture is cool completely, add eggs and flours. Mix all well to make a paste
.Pour the mixture in the mold
.Bake in oven for 2 hours
.Serve and enjoy the Christmas 😉
