Cauliflower soup

Ingredients
.1 kg cauliflower (cut into Flowerettes)
.1 Onion (chopped)
.1 ½ cups water
.3 cups milk
.1 cup heavy cream
2 tbsp chives (chopped)
. ¼ white pepper
.salt





Methods
.put cauliflower, onion, salt and water in a pressure cooker
.close the pressure cooker, Bring to full pressure on high heat. Reduce heat and cook for 2 minutes
.remove from heat, open the pressure cooker, blend the mixture with a handy blender to make it smooth
.refrigerate until well chilled (approximately 4 hours)
.Add milk, pepper and cream, stir and refrigerate for more 1 hour
.garnish with chives and serve cold
