Chicken spicy stew

Chicken stew

Ingredients
.500G chicken parts
.2 small onions (chopped)
. ½ cup hot chili paste
. ½ cup soy sauce
.3 cloves garlic (chopped)
.1 teaspoon sugar
.1 tbsp chili flakes
.2 potatoes (peeled and cut into dices)
.1 ½ cups water
.2 tbsp olive oil
.For garnish spring onion and grilled sesame seeds or according to your taste





Method
.Combine garlic, soy sauce, chili flakes, hot chili paste and sugar in a small bowl
.Add the paste to the chicken, and mix well
.Add water and mix
.Bring the mixture to boil and reduce heat to medium, cover and let simmer for 20 minutes by stirring occasionally
.Add potatoes to chicken mixture and leave to simmer for more 30 minutes, Cook till potatoes become soft
.remove from heat
.pour in serving bowl, garnish with spring onion and grilled sesame seeds or according to your taste
.Can be serve with rice or breads

Carrot soup

Carrot soup

Ingredients
.600g carrots (cut into dices)
. 1 Lt chicken stock
. 1 tbsp olive oil
. 1Clove garlic (chopped)
.1onion (chopped)
.1/2 teaspoon fresh thyme leaves
. ½ teaspoon fresh parsley
.salt
.Blackpepper
For garnish
.4 tbsp yogurt
.Fresh parsley leaves


Method
.heat oil in a saucepan, add chopped onion and garlic. Cook for 5 minutes
.Add chicken stock, and bring to boil
.Add carrot dices, parsley and thyme leaves, Let simmer for 40 minutes (uncover)
.Mix soup with a hand mixer, add salt and Blackpepper
.Pour in bowls and garnish with yogurt and parsley
.Serve hot or cold
Tips; if serving cold, let to cool in room temperature, then in refrigerator before garnish

Tomato soup

Tomato soup

Ingredients
. 5 large fresh tomatoes (chopped)
. 1 can crushed tomato
. 1 onion (chopped)
. 1clove garlic (chopped)
. 3 tbsp butter
. 4 cups chicken stock or Water(for veg)
. Salt
.Black pepper
. 3 tbsp heavy cream
. Fresh (chopped) coriander for garnish





Method
.Melt butter in a saucepan, add chopped onion and garlic, stir till onion become transparent
. Add chopped and crushed tomatoes. Stir for 3 minutes
. Add remaining ingredients except cream and coriander
.Cook on medium heat for 10 minutes
. Remove from heat; mix the soup in a blender
. Return soup on heat, add cream. Stir for 2 minutes
. Serve hot with fresh chopped coriander
