Crispy chicken wing with gram flour paste

Ingredients

. 500 g chicken wings

. ½ cup all purpose flour

.   3 tbsp gram flour (besan)

. 1 teaspoon garlic paste

. 1 tbsp fresh lime juice

.1 teaspoon red chili powder (optional)

. 1 teaspoon fresh or dried oregano

. Salt

.Blackpepper

.water

.oil for fry





Method  for crispy chicken wing with gram flour paste

 .marinade chicken wings with garlic paste, salt, Blackpepper and fresh lime juice

.in a bowl, add flour, gram flour, red chili powder, and oregano with a pinch of salt. Add little water to make a paste of pancake

.heat oil in a frying pan

.coat marinated chicken wings in dry flour

.dip chicken wings in gram flour paste

.deep fry the chicken wings until getting a nice color

.dry on a kitchen paper

.serve with sauces and salads

Tuna Pasties (special for Ramadan)

Tuna Pasties

Ingredients

.250 g Cold butter (cut into cubes)

.300 g flour

. ¾ cup cold water

.salt (if the butter is unsalted)

.1 pinch Blackpepper

.oil for fry

For fillings

.2 cans tuna fish

.1 onion (chopped)

. 1 green chili (chopped)

.Salt

.Blackpepper





Methods for Tuna Pasties

. Pour flour in a large bowl, add butter cubes, salt and Blackpepper. Mix until the mixture become crumbles like sand

.add cold water and make a dough. Cover and let rest for about 15 minutes

. In a bowl, add tuna with chopped onion, green chili, salt and Blackpepper

.spread dry flour on a working surface and roll the dough 2 cm thick. Cut into small squares

.add 1 tbsp of fillings in the middle of each square, fold to close the fillings inside and press the edges of each pasty with the tines of a fork like shown in the picture

.heat oil on medium heat and fry the pasties on both sides till golden brown (The pasties can be also bake)

.drained on a kitchen paper

.serve with chili sauces

The uncooked pasties can be stored in freezer for about 1 or 2 weeks

 

 

 

Custard puff pastry

Custard puff pastry

Ingredients

. 250 g puff pastry
(you can also use ready rolled puff pastry. But this puff pastry is a homemade one, made by topchefpro Chef Naj and she added a drop of food color in hers)

. 3 tbsp custard powder

.2 tbsp milk powder

. 2 tbsp sugar

.1 teaspoon vanilla essence

. 1½ cups water

. 1 tbsp milk powder mixed in ¼ cup water

. Honey





Methods for Custard puff pastry

. Preheat oven on 220°C

. Prepare custard by adding, custard powder in 1 ½ cups of cold water, 2 tbsp milk powder, sugar and vanilla essence.. Keep stirring and cook till it become thick, neither too liquid nor too dry

. Let custard to cool down completely

. Roll puff pastry to rectangular shape of about 25 cm wide, 30 cm long and 1 cm thick. Mark a line in the middle of the pastry, to make 2 sides, a slight line and make sure not to cut the pastry

. Pick one side of the pastry with a fork, and add prepared custard on it, dress well the custard and wrap the other side over it

. Brush milk and water mixture over the upper side of the pastry

. Cut the log into 12 or 10 pieces according to size of your choice

. Align on a baking tray
(I didn’t grease my baking tray, as the puff pastry already contained enough butter)

. Bake puff pastry till brown

. remove from oven, brush honey over the delicious puff pastry and serve warm with tea or coffee
