King Prawn in Red sauce



. 15 king prawns (uncooked)

.500 g canned red tomatoes ( finely chopped)

. 3 tbsp tomato puree

.1  big onion (chopped)

.3 cloves garlic (crush and chopped)

. 1 teaspoon ginger paste

.1 tbsp lemon juice

. 1 teaspoon sugar

. salt

. black pepper

. oil

. 1 sprig fresh thyme leaves

. 1 tbsp fresh parsley (chopped)


. Clean prawns by removing the dorsal vein off, wash and leave the shells if want or you can remove them depend on your taste

. Add salt , and lemon juice to the prawn follow with a pinch of black pepper. Mix and keep aside

. Heat 3 tbsp of oil in a pan and add the prawns. Cook until it change the color. Remove from pan and keep aside

. Add onion in the same pan, and let to fry for a while. Add garlic, ginger paste, tomato puree and sugar. Let simmer with a little of water for 5 minutes or until the onion become transparent

. Add canned chopped tomatoes and fresh thyme. Stir and let sauce to cook until the tomato become soft and well cooked

. Add prawns in the sauce and cook until sauce become thick

. Season with salt, black pepper and fresh parsley. Allow to cook for more 5 minutes

. Remove from heat, and serve with breads




Tuna Pasties (special for Ramadan)

Tuna Pasties


.250 g Cold butter (cut into cubes)

.300 g flour

. ¾ cup cold water

.salt (if the butter is unsalted)

.1 pinch Blackpepper

.oil for fry

For fillings

.2 cans tuna fish

.1 onion (chopped)

. 1 green chili (chopped)



Methods for Tuna Pasties

. Pour flour in a large bowl, add butter cubes, salt and Blackpepper. Mix until the mixture become crumbles like sand

.add cold water and make a dough. Cover and let rest for about 15 minutes

. In a bowl, add tuna with chopped onion, green chili, salt and Blackpepper

.spread dry flour on a working surface and roll the dough 2 cm thick. Cut into small squares

.add 1 tbsp of fillings in the middle of each square, fold to close the fillings inside and press the edges of each pasty with the tines of a fork like shown in the picture

.heat oil on medium heat and fry the pasties on both sides till golden brown (The pasties can be also bake)

.drained on a kitchen paper

.serve with chili sauces

The uncooked pasties can be stored in freezer for about 1 or 2 weeks




Spaghetti paprika with shrimps

Spaghetti paprika

Ingredients for Spaghetti with shrimps and paprika.
. 300g spaghetti
.300 g fresh shrimps (shelled)
. 1 clove garlic (chopped)
.1 red paprika (finely chopped)
. ½ teaspoon fresh thyme leaves
. ½ cup fresh parsley (chopped)
. ½ teaspoon paprika powder
. Olive oil

. Cook spaghetti in salted water
. Heat oil in a pan, add shrimps. Cook for to minutes
.add garlic, parsley, thyme, red paprika, salt and paprika powder with the shrimps, mix and cook for more 5 minutes
. Drain spaghetti, and place in plates
. Put shrimps preparation over spaghetti
.serve hot
