Carrot soup

.600g carrots (cut into dices)
. 1 Lt chicken stock
. 1 tbsp olive oil
. 1Clove garlic (chopped)
.1onion (chopped)
.1/2 teaspoon fresh thyme leaves
. ½ teaspoon fresh parsley
For garnish
.4 tbsp yogurt
.Fresh parsley leaves

.heat oil in a saucepan, add chopped onion and garlic. Cook for 5 minutes
.Add chicken stock, and bring to boil
.Add carrot dices, parsley and thyme leaves, Let simmer for 40 minutes (uncover)
.Mix soup with a hand mixer, add salt and Blackpepper
.Pour in bowls and garnish with yogurt and parsley
.Serve hot or cold
Tips; if serving cold, let to cool in room temperature, then in refrigerator before garnish
