Brioche breads

.25G dried yeast
. 3 tbsp water
. 100G sugar
. 450G flour
.1lemon zest (grated)
. 3 eggs
. 175 butter
. 1 tbsp milk
. 1 pinch salt

. Put yeast in a bowl; mix with 3 tbsp warm milk. Add 4 tbsp flour to get dough. Make a notch of a cross on the surface of the dough, to help it to increase its volume easily. Cover and put it again in the bowl and leave to expand for 20 minutes
. Pour the rest of the flour on a surface, by making a small space in the middle; add 1 pinch salt, sugar, lemon zest, eggs and butter. Combine all with your hand; work with it for some minutes
. Add the previous yeast dough to it, and keep working energetically with the dough for 15 minutes
. Make a ball with the dough. Place it in a large bowl, cover with a cloth. Leave it to increase volume for 3 hours in a warm place
.After 3 hours, your dough is ready; make the shape as you like, place it on a grease baking tray
. Brush the small brioche dough with egg yolk and spread what you like, chocolate, nuts, or sesame seedsĀ  over them
. Bake in preheat oven at 180 degrees for about 30 minutes
. Remove and serve. You can also spread sugar over the hot baked brioche breads for an additional taste
