Potato salad

Ingredients
.500G baby potatoes
.1 bowl soft cheese (cut into cubes)
.1 large onion (cut into slices)
. Salt to taste
.Blackpepper
.2 tbsp olive oil
.2 tbsp white vinegar
.1 handful fresh parsley





Method
.Put potatoes (unpeeled) into a large pan cover with cold water. Add salt, and bring to boil. Cook until potatoes become soft
.in a small bowl, mix vinegar, olive oil, salt and Blackpepper
.Remove potatoes from heat drain and let to cool
.Cut potatoes into halves, add in a large bowl, following with cheese and onion
.Add mixed vinaigrette to the potatoes mixture, mix well
.Add fresh parsley and serve
